
Pimm's Mint Iced Tea with Earl Grey
"Summer afternoon, summer afternoon; to me those have always been the two most beautiful words in the English language." Henry James had a point. And this Pimm's mint iced tea makes those afternoons even better.
Ingredients (serves 6 to 8)
- 4 Bellevue Earl Grey tea bags
- 20g fresh mint
- 100g caster sugar
- Juice of 2 large oranges, plus orange slices to serve
- Juice of 2 lemons, plus lemon slices to serve
- 400ml Pimm's No. 1
- A few sliced strawberries and plenty of ice, to serve
Method
- Put the tea bags and half the mint into a large jug. Pour over 1.2 litres of boiling water and leave to infuse for 10 minutes.
- Remove the tea bags and stir in the sugar. Leave to cool completely, then remove the mint.
- Add the orange juice, lemon juice and Pimm's. Chill thoroughly. This can be made up to a day ahead.
- Serve over plenty of ice, with slices of orange, lemon and strawberry and the remaining mint sprigs.
The bergamot in Earl Grey works beautifully with Pimm's, adding a gentle floral note that bought iced tea simply can't match. Leave out the Pimm's for an equally lovely non-alcoholic version.
