Pimm's Mint Iced Tea with Earl Grey

"Summer afternoon, summer afternoon; to me those have always been the two most beautiful words in the English language." Henry James had a point. And this Pimm's mint iced tea makes those afternoons even better.

Ingredients (serves 6 to 8)

  • 4 Bellevue Earl Grey tea bags
  • 20g fresh mint
  • 100g caster sugar
  • Juice of 2 large oranges, plus orange slices to serve
  • Juice of 2 lemons, plus lemon slices to serve
  • 400ml Pimm's No. 1
  • A few sliced strawberries and plenty of ice, to serve

Method

  1. Put the tea bags and half the mint into a large jug. Pour over 1.2 litres of boiling water and leave to infuse for 10 minutes.
  2. Remove the tea bags and stir in the sugar. Leave to cool completely, then remove the mint.
  3. Add the orange juice, lemon juice and Pimm's. Chill thoroughly. This can be made up to a day ahead.
  4. Serve over plenty of ice, with slices of orange, lemon and strawberry and the remaining mint sprigs.

The bergamot in Earl Grey works beautifully with Pimm's, adding a gentle floral note that bought iced tea simply can't match. Leave out the Pimm's for an equally lovely non-alcoholic version.
