
Blueberry and Mint Iced Tea
A gorgeous, non-alcoholic iced drink that works just as well at a children's party as it does at a summer barbecue. It takes barely 15 minutes and looks brilliant in a jug.
Ingredients (serves 4)
- 5 Bellevue Peppermint tea bags
- 140g blueberries
- 2 tbsp golden caster sugar
- A large handful of ice
- A handful of fresh mint leaves
- A few lemon slices
Method
- Boil the kettle and put the tea bags in a large jug. Pour over 500ml of boiling water and steep for 5 minutes.
- Meanwhile, put 100g of the blueberries in a separate jug with the sugar and lightly crush with the end of a rolling pin or a potato masher.
- Remove the tea bags. Pour the hot tea over the crushed blueberries and top up with 300ml of cold water, or adjust to taste.
- Chill until cold. Serve over ice, with fresh mint, a lemon slice and a few whole blueberries.
The peppermint tea gives this a lovely clean, cooling edge that pairs beautifully with the sweetness of the blueberries. Easy to make ahead and keep in the fridge for a few hours.
