Lemongrass and Ginger Iced Tea (with Optional Cachaca)
A long, spicy, refreshing drink built on our Ginger and Lemongrass infusion. It works brilliantly on its own as an iced tea, or with a measure of cachaca for something a little more festive.
Cachaca is Brazil's national spirit, made from fermented fresh sugar cane juice. It's the base for a caipirinha, and it pairs wonderfully with the zingy warmth of ginger and lemongrass. If you can't find it, a light rum works well too.
Ingredients (makes 2 glasses)
- 1 tbsp Bellevue Ginger and Lemongrass infusion, brewed in 300ml of hot water and left to cool
- A squeeze of agave syrup
- Juice of 1 lime
- Crushed ice
- 1 measure of cachaca per glass (optional)
- Slices of lemon and lime to garnish
Method
- Brew the Ginger and Lemongrass infusion in 300ml of hot water. Stir in the agave syrup, then leave to cool completely.
- Add the lime juice.
- Fill two tumblers with crushed ice. Add a measure of cachaca to each glass if using.
- Pour the cooled infusion over the ice and garnish with lemon and lime slices.
This is spicy and refreshing in equal measure. Leave out the cachaca entirely and you have a brilliant iced herbal tea for a hot afternoon.
