Earl Grey Iced Tea with Lemon - Simple, Refreshing, British
Summer afternoons call for something cold, and this Earl Grey iced tea with lemon is just the thing. It takes about 15 minutes and a handful of ingredients, and it's far nicer than anything you'll find in a bottle.
Ingredients (serves 4)
- 3 Bellevue Earl Grey tea bags
- Juice of 2 lemons, plus 1 lemon sliced
- 2 tbsp caster sugar
- 12 to 18 ice cubes
- 1 litre boiling water
Method
- Pour 1 litre of boiling water into a heatproof jug with the tea bags. Leave to infuse for 3 minutes, then remove and discard the bags.
- Leave the tea to cool, or place the jug in a bowl of cold water to speed things up.
- Pour the cooled tea into a serving jug with the lemon juice, lemon slices and sugar. Stir until the sugar has dissolved.
- Add the ice cubes and serve immediately.
The bergamot in Earl Grey and a squeeze of lemon are made for each other. Add more lemon juice if you like a sharper edge, or a touch more sugar if you prefer it gentler. Either way, it's surprisingly refreshing.
